Bird's Nest with Fresh Milk

- · 1 pre-soaked dried bird's nest (about 5g dry weight)
- · 1.5 cups fresh full-cream milk
- · Rock sugar or honey to taste
- · 1 egg white (optional, for added richness)
Method
- 1Warm the milk gently in a double-boiler, do not let it boil hard.
- 2Add the soaked bird's nest and simmer gently on low heat for 15-20 minutes.
- 3If using egg white, whisk lightly and stir in during the last 2 minutes of cooking, stirring continuously.
- 4Sweeten to taste and serve warm.
